  1. In a small saucepan over low heat, bring the first four ingredients to a gentle boil.
  2. Take off the heat and stir until the coconut is melted and well combined.
  3. Put the warm blueberry mixture into a blender and add the gelatin powder. Process until completely smooth (will be fairly thick).
  4. Pour the mixture into a glass dish (8×8”) lined on the bottom with parchment paper.
  5. Refrigerate for 2 hours.
  6. When set, gently tease out the contents onto a chopping board and cut into bite-sized pieces.
  7. Store in the refrigerator for up to 5 days.
