  1. Place large heavy-bottomed pot or Dutch oven on medium heat and add oil. Let oil heat for about 1 minute, then add onion. Sauté for 5 minutes, stirring occasionally.
  2. Add ground beef and break it into small pieces with wooden spoon. Stir occasionally for about 5 minutes. When beef is nearing brown, add spices: chili powder, paprika, cumin, and chipotle powder.
  3. Add bell peppers and cook for 5 minutes, stirring occasionally to ensure even cooking.
  4. Stir in garlic and cook for 1 minute. Then add beans, cauliflower rice, tomato paste, whole tomatoes, and broth (see our broth recipes here: www.drkarafitzgerald.com/recipes). Stir to combine and simmer for about 30 minutes.
  5. Serve with optional toppings of choice.
Recipe Notes
  • Make fresh cauliflower rice by running raw cauliflower through a food processor, stems included, or buy prepared cauliflower rice.
  • If time allows, let chili cook even longer to become more flavorful.
  • Perfect for large groups or meal prep – make a big batch and freeze in individual portions.
