  1. Combine all ingredients in a food processor and blend until a medium-coarse mixture (dough consistency) is formed. Stop and scrape the sides down intermittently for a uniform blend.
  2. Make 12 balls out of the mixture and roll them in the extra shredded coconut.
  3. Enjoy right away or store in the fridge (storage instructions below).
