Hearty Autumn Vegetable Soup with Epinutrients
This is strawberry mint vinaigrette is a great salad dressing that tastes especially good in the spring and summer. The sweet taste coupled with the hint of mint tastes fresh and reminds one of a nice spring or summer day. With strawberries being a superfood, they make a nice addition to a salad of kale, cucumber slices, avocado and walnuts. Strawberries are rich in the essential nutrients, vitamin C, potassium, folic acid and fiber. Skip the agave if you prefer a dressing that is less sweet.

- 2 Cups Fresh strawberries
- 8 Mint leaves
- 1/4 Cup Agave Optional
- 1/4 Cip White wine vinegar
- 2 Tbsp Lemon juice
- 1/3 Cup olive oil

Instructions
- Place all the ingredients in the blender and blend until completely smooth.
- Store the vinaigrette in a mason jar with a tight-fitting lid and store it in refrigerator for 3-5 days. Shake well before using.
Great recipe. For me, putting the salad together is so much of the work, I think I add to many ingredients, i.e. baby herb mix, cucumber, grated radish/carrot, onion, tomato, celery stalks, olives, sweet vidalia onion, half avocado, bit of kraut, some walnuts. Sprinkle some olive oil, black seed oil, maybe some balsamic vinegar .. sigh.. I just have to make a meal out of it. I’ve become so used to a drier salad now, but is it really dry? I’m afraid to buy strawberries from the store, I u-pick and freeze. A great way to get your lemon in each day is to squeeze a small lemon into a pint jar, add your tablespoon of brags to that fill with your fav. spring water, and drink half twice in between meals, mint .. tea bag into that or else separate. Guy I work with says he’s just putting spices on his salad.
