Vanilla Cinnamon Apple Cobbler
Filling Ingredients
Streusel Ingredients
  1. Use one 9” x 9” x 2” oven-safe, square baking glass dish.
  2. Preheat the oven to 350F.
  3. Wash, peel, and slice the apples.
  4. Place the apples in a large, heavy duty pan and add cinnamon, salt, arrowroot, 3 tablespoons water, vanilla, stevia, and lemon juice.
  5. Cover the pan with a lid and cook until apples are tender, but still holding the shape of the slices – about 30 minutes on medium to low heat.
  6. Stir the apples at least twice during the cooking process. Remove from the heat when the apples are cooked, add rum if desired, and set aside while the streusel is prepared.
  1. In the food processor place the almond flour, cassava flour, a pinch salt. Pulse a few times until fully mixed.
  2. Next add the ghee or butter (or vegan option) and pulse just twice until it resembles large to small crumb meal.
  3. Stop the food processor, add almonds, vanilla and olive oil. Pulse a few more times.
  4. Set the topping to the side until ready to use.
  5. Transfer the apple filling to the baking dish and top with the streusel.
  6. Bake for about 35 minutes at 350 F.
  7. The cobbler will be golden brown on top and the filling will be bubbly.
  8. Remove the cobbler from the oven and allow it to cool to room temperature.
  9. This dish can be eaten right away or stored in the refrigerator for 3 days.

*Vegan option: Use coconut oil, olive oil or a vegan butter instead of ghee or butter.
