- For Salad
- 2 cups mixed greens (measure raw, chopped & tightly packed) e.g. spinach, arugula, kale
- 1 cup cherry tomatoes halved
- 1 medium cucumber sliced
- 1 medium avocado diced
- 1/2 cup carrots shredded
- 1/4 cup red cabbage thinly sliced
- 2 tbsp. raw sunflower seeds
- 1/4 cup pomegranate seeds
- 1/4 cup Fresh parsley chopped
- 1/4 cup fresh cilantro chopped
- For Citrus-Herb Dressing
- 1 juice of 1 lemon
- 2 tbsp. extra virgin olive oil (EVOO)
- 1 tbsp. raw apple cider vinegar
- 1 tsp. Dijon mustard
- 1 clove garlic minced
- 1 tsp. honey or maple syrup optional, omit if following the Younger You Intensive
- To taste Salt and pepper
- 1 tbsp. fresh dill chopped

- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, avocado, shredded carrots, red cabbage, sunflower seeds, pomegranate seeds, parsley, and cilantro.
- Gently toss to mix all the ingredients evenly.
- In a small bowl or jar, whisk together the lemon juice, olive oil, apple cider vinegar, Dijon mustard, minced garlic, honey or maple syrup (if using), salt, pepper, and fresh dill.
- Taste and adjust seasoning if necessary.
- Drizzle the citrus-herb dressing over the salad just before serving.
- Gently toss the salad to coat the vegetables with the dressing.
