You don’t always have to make bone broth to enjoy the extensive benefits of collagen and gelatin. These gummies are an excellent, portable way to carry gelatin snacks with you wherever you go. And if bone broth isn’t your thing, then this makes an excellent alternative!

What’s the difference between collagen and gelatin? Collagen is what is actually in the bones and then once you cook them the collagen forms gelatin which is what is released into the cooking liquid or broth. Both collagen and gelatin have amazing health benefits, supporting the integrity of our bones, our joints, our teeth, our skin, and other types of ‘connective’ tissue. It is also wonderful for nourishing and healing a leaky gut.

In this recipe, we’ve combined the gelatin with antioxidant and anti-inflammatory blueberries and lemon, which help calm inflammation in the gut (and elsewhere), coconut which has antimicrobial properties and is an easily absorbed source of energy where guts are damaged.

This recipe is free of gluten, dairy and soy.

Collagen /ˈkɒlən/ is the main structural protein in the extracellular space in the various connective tissues in animal bodies. As the main component of connective tissue, it is the most abundant protein in mammals,[1] making up from 25% to 35% of the whole-body protein content. Depending upon the degree of mineralization, collagen tissues may be rigid (bone), compliant (tendon), or have a gradient from rigid to compliant (cartilage)/. Collagen, in the form of elongated fibrils, is mostly found in fibrous tissues such as tendons, ligaments and skin. It is also abundant in corneas, cartilage, bones, blood vessels, the gut, intervertebral discs and the dentin in teeth.

Ingredients

Instructions

  1. In a small saucepan over low heat, bring the first four ingredients to a gentle boil.
  2. Take off the heat and stir until the coconut is melted and well combined.
  3. Put the warm blueberry mixture into a blender and add the gelatin powder. Process until completely smooth (will be fairly thick).
  4. Pour the mixture into a glass dish (8x8”) lined on the bottom with parchment paper.
  5. Refrigerate for 2 hours.
  6. When set, gently tease out the contents onto a chopping board and cut into bite-sized pieces.
  7. Store in the refrigerator for up to 5 days.
