Healthy Carrot Soup
  1. Heat oil in pot, add curry and garlic. Cook about 30 seconds.
  2. Add ginger, onion, carrot, bay leaf, and stock. Bring to boil.
  3. Reduce heat, simmer until tender, about 30 minutes. Remove bay leaf, use immersion blender(or put in regular blender) and blend until smooth.
  4. Stir in coconut milk, season to taste. I like to garnish with bacon, but is delicious on its own or with chicken. Enjoy!
