This Coconut Carrot Puree is a sure crowd pleaser – the natural sweetness of the carrots, melded with cinnamon, is too hard to resist. And carrots are one of the most economical vegetables so your wallet will be happy too!

Instructions

  1. Peel and slice the carrots.
  2. Steam the carrots until they are very soft.
  3. Add the carrots to a food processor along with the coconut oil. Blend until the carrots are pureed and the mixture is well blended.
  4. Add salt to taste. For a sweeter taste, add cinnamon. For a more savory taste, try cumin or curry. There are lots of spice options so try whatever sounds good! Mix until spices are incorporated and serve.
