Okra Fries

The humble okra is an ancient vegetable thought to originate from Africa and Asia and brought to the United States on ships during the 18th century.

It is also a powerfully-nutritious food. Okra is full of soluble, mucilaginous fiber which is very healing to the digestive tract, helps to regulate bowel transit time, and feeds healthy bacteria in your gut. It has been shown to protect the stomach lining from developing ulcers. And It also binds and helps eliminate excess cholesterol, hormones, and toxins.

Okra is a good source of vitamin C, vitamin K, calcium, and manganese, and polyphenols including catechins and quercetin, which have beneficial adaptive effects on gene expression by balancing DNA methylation.

Okra Fries

Ingredients

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In large bowl, toss the okra in with wet ingredients first. Next, add all dry ingredients and mix well to incorporate, feel free to use your hands.
  3. Spread the okra out on a sheet pan, single layer, so they all have a chance to get a bit crispy.
  4. Roast for 12 minutes then remove from oven, stir and return to oven for another 12-13 minutes, or until crispy, but not burnt.
  5. Remove from oven and serve.
