This is a great fall and winter dish to go with your meals or it can be enjoyed just as a dessert. I like to use firm, sweet and tart apples like Pink Lady or Jonathan. These apples hold their shape beautifully, but best of all they contain loads of pectin. Pectin may help heal intestinal permeability, also known as leaky gut.
The components of this dish can be prepared separately 2-3 days in advance. Just store the filling and streusel in the refrigerator and assemble the day you need it. Best served warm.

- Filling Ingredients
- 12 Apples, 2” x 3/8” peeled, sliced
- 3 tbsp Arrowroot
- 3 tbsp Water
- 1 tbsp vanilla extract
- 1/2 tsp ceylon cinnamon
- 1 pinch celtic salt
- 1/4 tsp stevia liquid
- 1 tsp myers rum optional
- Streusel Ingredients
- 1 cup almond flour 3.5 oz
- 1/2 tbsp cassava flour
- 1 pinch celtic salt
- 2 tbsp ghee or butter*
- 1 tbsp olive oil
- 1 tbsp vanilla extract
- 1/4 cup almonds Whole, chopped, optional
- 1 tsp Lemon juice

- Use one 9” x 9” x 2” oven-safe, square baking glass dish.
- Preheat the oven to 350F.
- Wash, peel, and slice the apples.
- Place the apples in a large, heavy duty pan and add cinnamon, salt, arrowroot, 3 tablespoons water, vanilla, stevia, and lemon juice.
- Cover the pan with a lid and cook until apples are tender, but still holding the shape of the slices - about 30 minutes on medium to low heat.
- Stir the apples at least twice during the cooking process. Remove from the heat when the apples are cooked, add rum if desired, and set aside while the streusel is prepared.
- In the food processor place the almond flour, cassava flour, a pinch salt. Pulse a few times until fully mixed.
- Next add the ghee or butter (or vegan option) and pulse just twice until it resembles large to small crumb meal.
- Stop the food processor, add almonds, vanilla and olive oil. Pulse a few more times.
- Set the topping to the side until ready to use.
- Transfer the apple filling to the baking dish and top with the streusel.
- Bake for about 35 minutes at 350 F.
- The cobbler will be golden brown on top and the filling will be bubbly.
- Remove the cobbler from the oven and allow it to cool to room temperature.
- This dish can be eaten right away or stored in the refrigerator for 3 days.
*Vegan option: Use coconut oil, olive oil or a vegan butter instead of ghee or butter.

Can’t use almond flour – what would be a good substitute? Could I use coconut flour?
Also can’t use almonds – how about walnut or pecan?

You can use walnut flour (finely ground walnuts), but omit oil.
What could be substituted in place of almond flour? Almond products are not recommended on a kidney stone prevention eating plan.

Replace the almond flour for sorghum flour, but only use 4.5 oz. of sorghum flour. Sorghum flour is much lower in oxalate content. Add a full tablespoon of vanilla extract. Proceed as instructed in recipe. See book for other substitutions.
